Born in the Southern Philippines, Nouel Omamalin was offered his first international cooking stint in 2005 at Dubai’s Burj Al Arab, then the only seven-star hotel in the world. Between 2006 and 2008, he became an executive pastry chef by virtue of his accreditation from Lenôtre Paris and a certification from the New Zealand Qualifications Authority. Chef Nouel joined a Middle Eastern airline in 2013 as in-flight chef. His cookbook, Nouel’s Nifty Chic Baking, was published in 2017.
